  • 1 1/2 teaspoons Salt
  • 4 tablespoons (60 grams) Unsalted Butter, melted
  • 1 large Egg, beaten
  • 1/2 cup (60 grams) Baking Soda (for boiling water)
  • Coarse Sea Salt (for sprinkling)
  • 2 cups (200 grams) Cheddar Cheese, freshly shredded
  • 1/2 cup (120 ml) Lager or Pilsner Beer
  • 1 cup (240 ml) Heavy Cream
  • 2 tablespoons (30 grams) Butter
  • 2 cloves Garlic, minced
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Worcestershire Sauce
  • 1/4 teaspoon Black Pepper

Instructions

  1. In a large bowl, combine warm water and brown sugar. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. Add melted butter, beaten egg, and salt to the yeast mixture. Gradually add flour, mixing until dough comes together.
  3. Knead the dough for 5-7 minutes using a mixer with a dough hook, or 8-10 minutes by hand, until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour until doubled in size.
  5. Preheat oven to 425ยฐF (220ยฐC). Punch down dough and divide into 12-15 equal pieces. Roll into balls and place on a parchment-lined baking sheet.
  6. Bring a large pot of water to a boil and add baking soda. Drop pretzel bites into the water for 30 seconds, then remove with a slotted spoon.
  7. Sprinkle boiled pretzel bites generously with coarse sea salt.
  8. Bake for 12-15 minutes until deep golden brown. Remove and let cool slightly.
  9. While pretzels bake, melt 2 tablespoons butter in a saucepan over medium heat. Sautรฉ minced garlic for 1 minute.
  10. Pour in beer and simmer for 5 minutes to reduce. Reduce heat to low and whisk in heavy cream.
  11. Slowly add shredded cheddar cheese, stirring constantly until melted and smooth.
  12. Stir in Dijon mustard, garlic powder, Worcestershire sauce, and pepper. Keep warm until serving.

Notes

Shred your own cheese to prevent anti-caking agents from affecting the sauce texture. Ensure water for boiling is at a rolling boil for 30 seconds to develop the classic crust. For gluten-free options, use a 1:1 gluten-free flour blend. The cheese sauce does not freeze well; make it fresh.
