Instructions

  1. Pat the chicken thighs dry thoroughly using paper towels to ensure crispy skin (about 3 minutes).
  2. Season both sides of the chicken thighs generously with salt and freshly ground black pepper.
  3. Heat a large skillet over medium heat and add 2 tablespoons of butter. Let it melt and foam but do not brown (2-3 minutes).
  4. Place the chicken thighs skin-side down in the hot butter. Press down gently with tongs to ensure even contact. Cook without moving for 7-8 minutes until the skin is golden brown and crisp.
  5. Flip the chicken thighs and cook for another 7 minutes until cooked through (total cook time around 15 minutes depending on thickness).
  6. Push the chicken to one side of the skillet. Add the remaining 1 tablespoon of butter and minced garlic to the empty side. Stir until fragrant, about 30 seconds to 1 minute, being careful not to burn the garlic.
  7. Add honey, soy sauce, and lemon juice to the garlic butter. Stir and let the sauce bubble gently. Spoon the sauce over the chicken thighs to coat them (about 2 minutes).
  8. Reduce heat to low and simmer gently for another 2 minutes to meld the flavors.
  9. Remove from heat and sprinkle chopped fresh parsley over the chicken for garnish.
