A festive and moist funfetti poke cake soaked with a sweet glaze and topped with silky white chocolate frosting, perfect for celebrations like the Fourth of July.

Ingredients

Scale
  • 1 box white cake mix (e.g., Betty Crocker)
  • Ingredients called for on the cake mix box (usually eggs, oil, and water)
  • 1/2 cup rainbow sprinkles (classic jimmies)
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract (pure vanilla recommended)
  • 8 oz (225 g) white chocolate, chopped (e.g., Ghirardelli white chocolate chips)
  • 1 cup heavy cream (cold)
  • 1 tablespoon powdered sugar (optional)
  • Extra red, white, and blue sprinkles for decorating

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Prepare the cake batter by combining the cake mix with eggs, oil, and water as per box instructions. Mix on medium speed for about 2 minutes until smooth.
  3. Gently fold 1/2 cup of rainbow sprinkles into the batter using a rubber spatula.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool for 10 minutes in the pan until warm but not hot.
  6. Using a toothpick or skewer, poke holes about 1 inch apart all over the top of the warm cake.
  7. In a bowl, whisk together sweetened condensed milk, whole milk, and vanilla extract until smooth.
  8. Slowly pour the glaze over the cake, letting it seep into the holes. Spread any remaining glaze evenly with a spatula.
  9. Cover the cake with plastic wrap and refrigerate for at least 2 hours or overnight to allow the glaze to absorb.
  10. Melt the chopped white chocolate gently in a double boiler or microwave in 20-second bursts, stirring until smooth. Let cool slightly.
  11. In a chilled bowl, whip the heavy cream with powdered sugar (if using) until soft peaks form.
  12. Fold the melted white chocolate gently into the whipped cream until smooth and combined.
  13. Spread the white chocolate frosting evenly over the chilled cake.
  14. Decorate with extra red, white, and blue sprinkles.
  15. Slice and serve. Keep leftovers refrigerated.

Notes

Do not overbake the cake to keep it moist. Poke holes while the cake is warm for better glaze absorption. Melt white chocolate gently to avoid seizing. Chilling the cake overnight enhances flavor and texture. For dairy-free, substitute heavy cream with coconut cream and white chocolate with a vegan alternative. Gluten-free options are available with appropriate cake mix and sprinkles.
