A quick and refreshing summer snack featuring cherry tomatoes, fresh mozzarella balls, and basil threaded onto skewers with a drizzle of balsamic glaze.

Ingredients

  • 1 pint (about 250 grams) cherry tomatoes, washed and dried
  • 8 ounces (225 grams) mozzarella balls (bocconcini or ciliegine), drained
  • 20 fresh basil leaves, whole and washed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze or reduction
  • Pinch of sea salt
  • Pinch of freshly ground black pepper
  • 20 to 25 wooden skewers or toothpicks, soaked in water for 10 minutes if wooden

Instructions

  1. Rinse cherry tomatoes and basil leaves under cold water and pat dry. Halve each cherry tomato lengthwise.
  2. Drain mozzarella balls and gently pat dry with paper towels.
  3. In a medium mixing bowl, combine halved cherry tomatoes and mozzarella balls. Drizzle with olive oil and sprinkle with sea salt and black pepper. Toss gently to coat evenly.
  4. Thread one cherry tomato half, one basil leaf (folded if large), and one mozzarella ball onto each skewer. Repeat until all ingredients are used, making about 20-25 mini skewers.
  5. Arrange skewers on a serving platter and lightly drizzle balsamic glaze over the top. Optionally, add a tiny pinch of flaky salt.

Notes

If making balsamic reduction, simmer ½ cup balsamic vinegar until syrupy and cool before drizzling. For grilling, cook skewers 2-3 minutes per side over medium heat. Use fresh mozzarella balls for best texture. Add balsamic glaze just before serving to keep basil fresh. Store leftovers covered in fridge up to 24 hours; bring to room temperature before serving.
