A quick and delicious side dish featuring tender carrots glazed with honey and butter, perfect for busy weeknights. This recipe combines simple ingredients to create a sweet, caramelized flavor with a hint of cinnamon.

  • 1 pound (450g) carrots, peeled and cut into sticks or rounds
  • 2 tablespoons (30g) unsalted butter, melted
  • 2 tablespoons (30ml) honey
  • ½ teaspoon (2.5g) salt
  • ¼ teaspoon ground cinnamon (optional)
  • Freshly ground black pepper, a light sprinkle
  • Small handful fresh parsley, chopped (optional)

Instructions

  1. Peel and cut 1 pound (450g) of carrots into uniform sticks or rounds. This should take about 5 minutes.
  2. Place 2 tablespoons (30g) of unsalted butter in a large skillet over medium heat. Let it melt gently without browning, about 2 minutes.
  3. Toss the carrot pieces into the melted butter. Stir to coat evenly. Cook for 8-10 minutes, stirring occasionally, until the carrots start to soften but still have a slight crunch.
  4. Drizzle 2 tablespoons (30ml) of honey over the carrots. Stir quickly to coat them with the honey and butter mixture. Cook for another 2-3 minutes, stirring often to prevent burning.
  5. Sprinkle ½ teaspoon (2.5g) salt, ¼ teaspoon cinnamon (optional), and a few twists of freshly ground black pepper. Stir once more to combine all the flavors.
  6. Remove from heat. If desired, sprinkle chopped fresh parsley over the top. Serve warm.

Notes

If carrots start sticking or browning too fast, lower the heat and add a splash of water to loosen the glaze. For a vegan version, substitute butter with coconut oil or plant-based margarine and honey with maple syrup. Avoid adding honey too early to prevent burning. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
