Ingredients

Scale
  • 2 medium peaches, halved and pitted
  • 1 small pineapple, peeled and sliced into rings or chunks
  • 1 cup strawberries, hulled and halved
  • 1 large banana, sliced lengthwise
  • 2 tablespoons olive oil or melted butter
  • ½ teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup (optional)
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar

Instructions

  1. Prep your fruit (5 minutes): Rinse and dry the peaches, pineapple, strawberries, and banana. Halve the peaches and remove pits. Slice pineapple into rings or chunks. Hull and halve strawberries. Slice banana lengthwise into halves or thick slices.
  2. Mix oil and spices (3 minutes): In a bowl, combine 2 tablespoons olive oil or melted butter with ½ teaspoon ground cinnamon. Toss your prepared fruit gently in this mixture, ensuring each piece is lightly coated.
  3. Heat the grill pan (2 minutes): Place your grill pan over medium-high heat and let it get hot until light wisps of smoke appear.
  4. Grill the fruit (10-12 minutes): Arrange the fruit pieces on the grill pan in a single layer. Grill peaches and pineapples for about 4-5 minutes per side until golden and caramelized. Grill strawberries and bananas for about 2-3 minutes per side until grill marks appear and they soften slightly. Flip gently with tongs or spatula.
  5. Whip the cream (5 minutes): Pour the heavy cream into a chilled mixing bowl. Add 1 tablespoon powdered sugar and 1 teaspoon vanilla extract. Whisk with an electric mixer or by hand until soft peaks form. Avoid overwhipping.
  6. Plate and serve (2 minutes): Arrange grilled fruit on serving plates. Drizzle honey or maple syrup if desired. Dollop or pipe whipped cream generously over the fruit. Serve immediately.

Notes

Use ripe but firm fruit to avoid mushiness. Keep grill pan hot for caramelization. Whip cream last minute and keep chilled for best texture. Add a teaspoon of cornstarch to whipped cream for stability if needed. Variations include using coconut cream for dairy-free or adding spices like chili powder or smoked paprika for a twist.
