  • 2 large boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 1 cup (240 ml) smoky, slightly sweet BBQ sauce (e.g., Sweet Baby Rayโ€™s)
  • 1 cup (240 ml) crushed pineapple, drained
  • Optional: 12 small slider buns (Hawaiian rolls recommended)

Instructions

  1. Rinse and pat dry the chicken breasts. Trim any excess fat but keep connective tissue intact.
  2. Place chicken breasts at the bottom of the crockpot.
  3. Pour 1 cup of BBQ sauce evenly over the chicken.
  4. Add 1 cup of drained crushed pineapple on top. Do not stir.
  5. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours if short on time.
  6. Check at 4 hours; chicken should shred easily with a fork.
  7. Shred the chicken directly in the crockpot using two forks or tongs and mix well with sauce and pineapple.
  8. Spoon the pineapple BBQ chicken onto slider buns (about 12 servings) and serve warm.
  9. Optional: add coleslaw or pickles for extra crunch and tang.
  10. If sauce is too watery, remove lid and cook on high for 15-20 minutes to thicken.
