  • 12 ounces root beer (e.g., Barq’s)
  • 1 cup BBQ sauce (smoky, slightly tangy variety)
  • 1 tablespoon seasoning mix (salt, pepper, smoked paprika)

Instructions

  1. Trim the pork shoulder by removing any large chunks of fat, leaving some fat to keep the meat moist (about 5 minutes).
  2. Rub the seasoning mix evenly over all sides of the pork (about 3 minutes).
  3. Place the seasoned pork shoulder into the slow cooker insert, fat side up.
  4. Pour the root beer around the pork (not directly on top to keep seasoning intact), then spread the BBQ sauce evenly on top of the meat (about 2 minutes).
  5. Cover and cook on LOW for 8 hours or HIGH for 6 hours until the pork easily pulls apart with a fork.
  6. Remove the pork from the slow cooker onto a plate or cutting board. Use meat shredder claws or two forks to shred the pork into bite-sized pieces (about 10 minutes). Discard large fat chunks.
  7. Return the shredded pork to the slow cooker and stir into the remaining root beer BBQ sauce. Warm on LOW for 10-15 minutes to soak up flavors.
  8. Serve the pulled pork on buns, over rice, or with your favorite sides.

If the sauce is too thin after cooking, remove the pork and simmer the sauce on HIGH for 10 minutes to thicken before mixing back in. Pour root beer gently around the edges to avoid washing off seasoning. Let pork rest a few minutes before shredding for easier handling.
