These easy 5-ingredient freezer breakfast burritos are the perfect make-ahead breakfast for busy mornings. Made with eggs, breakfast sausage, cheddar cheese, flour tortillas, and salsa, they’re quick to assemble, freeze beautifully, and reheat in under 2 minutes.

Instructions

  1. Cook the Sausage: Heat a large non-stick skillet over medium heat. Add the breakfast sausage and break it apart with a wooden spoon. Cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Transfer to a plate lined with paper towels to drain and cool.
  2. Scramble the Eggs: In a medium bowl, whisk together 12 large eggs and 2 tablespoons of milk or water until frothy. Reduce heat under the skillet to medium-low and add 1 tablespoon of butter. Once melted, pour in the eggs. Let sit for 30 seconds, then gently push cooked edges toward the center with a spatula. Cook until just set but still soft, about 8-10 minutes. Remove from heat immediately.
  3. Combine the Filling: In a large bowl, combine the cooked sausage, scrambled eggs, 2 cups shredded cheddar cheese, and 1 cup salsa. Stir gently until evenly distributed.
  4. Prepare the Tortillas: Lay out 12 flour tortillas on a clean work surface. If stiff, warm in the microwave for 20-30 seconds wrapped in a damp paper towel.
  5. Assemble the Burritos: Place about 1/3 cup of filling in the center of each tortilla. Fold the sides inward, then fold the bottom edge up and over the filling. Roll tightly away from you, tucking the filling in as you go. Place seam-side down on a parchment-lined baking sheet.
  6. Cool Completely: Let the assembled burritos sit at room temperature until completely cool, about 15-20 minutes.
  7. Wrap and Freeze: Once cool, wrap each burrito tightly in aluminum foil, twisting the ends closed. Place in a freezer-safe zip-top bag, squeeze out air, seal, and label with the date. Freeze for up to 3 months.

For best texture, cook eggs low and slow with a splash of milk to keep them tender after freezing. Let filling cool completely before assembling to prevent soggy tortillas.
