Ingredients

Scale
  • 4 medium nectarines, halved and pitted
  • 1/4 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 pint vanilla ice cream

Instructions

  1. Preheat your grill or grill pan to medium-high heat, about 375°F (190°C).
  2. Rinse and dry the nectarines. Slice in half and remove pits. Pat the cut sides dry with a paper towel.
  3. In a small bowl, combine brown sugar and ground cinnamon (if using). Stir well.
  4. Brush the cut sides of each nectarine half with melted butter using a basting brush.
  5. Sprinkle the brown sugar-cinnamon mixture generously over the buttered sides of the nectarines.
  6. Place nectarines cut-side down on the hot grill or pan. Cook for 3-4 minutes without moving them.
  7. Flip the nectarines carefully and cook the skin side for another 2-3 minutes until softened but still holding shape.
  8. Remove the nectarines from the grill and let them rest for 1-2 minutes.
  9. Serve warm nectarines with a generous scoop of vanilla ice cream on top or alongside.

Notes

Choose firm but ripe nectarines for best grilling results. Pat cut sides dry to help sugar stick and caramelize. Use melted butter to create a crispy, golden crust. Avoid crowding the grill and resist flipping too soon to prevent sticking or breaking. Adjust grilling time based on fruit ripeness and grill temperature. For a dairy-free version, substitute butter and ice cream with vegan alternatives.
