Easy 5-Ingredient Microwave Mug Lasagna: Best Quick Dinner

A quick and easy single-serving lasagna made in a mug with just five ingredients and cooked in the microwave. Perfect for a comforting dinner in under 5 minutes with minimal dishes.

  • 34 lasagna noodles, broken into 1-inch pieces
  • 1/4 cup marinara sauce
  • 2 tablespoons ricotta cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. Break 3-4 lasagna noodles into small pieces, roughly 1-inch squares.
  2. Spoon about 1 tablespoon of marinara sauce into the bottom of a microwave-safe mug. Spread to coat the bottom.
  3. Add a single layer of broken noodle pieces on top of the sauce.
  4. Drop about 1 teaspoon of ricotta onto the noodles, then sprinkle a little mozzarella and a pinch of Parmesan on top.
  5. Repeat layers: add another tablespoon of marinara, another layer of noodles, another dollop of ricotta, and more mozzarella and Parmesan. Continue until mug is about 3/4 full (about 3 layers). Press down gently on each layer.
  6. Finish with a final layer of sauce, a generous sprinkle of mozzarella, and a good dusting of Parmesan.
  7. Place mug on a small plate or paper towel in the microwave. Cook on high power for 2 minutes, then check. If noodles are still firm, cook in 30-second increments until tender (total time about 2-3 minutes).
  8. Let the mug lasagna rest for 1 minute before eating.

Notes

Don’t overfill the mug – leave about an inch of space at the top. Break noodles small enough (about postage stamp size) for even cooking. Press down between layers to prevent air pockets. Add a splash of water to thick sauces. Microwave wattages vary – start with 2 minutes and adjust. Let rest for 1 minute before eating to avoid burns and allow layers to set.
