A quick and easy apple cider mimosa with a cinnamon sugar rim that’s perfect for brunch, holidays, or any occasion. Made with just five ingredients and ready in five minutes.

Ingredients

Scale
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 lemon wedge
  • 2 ounces (1/4 cup) chilled apple cider (not apple juice)
  • 4 ounces chilled prosecco or champagne
  • Optional: ice, thin apple slice or cinnamon stick for garnish

Instructions

  1. Prepare the cinnamon sugar mixture: In a shallow dish, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon. Whisk together with a fork until evenly distributed.
  2. Prep the glasses: Run a lemon wedge around the rim of each champagne flute to moisten it evenly.
  3. Rim the glasses: Invert each glass and dip the moistened rim into the cinnamon sugar mixture, gently twisting for even coverage. Lift straight up and tap off excess. Let set for about 30 seconds.
  4. Add the apple cider: Pour 2 ounces (about 1/4 cup) of chilled apple cider into each prepared glass, filling it about one-third full.
  5. Top with prosecco: Slowly pour chilled prosecco or champagne into each glass, filling to about an inch from the rim. Pour slowly to minimize foam.
  6. Garnish and serve: Give the drink a gentle stir. Add an optional thin apple slice or cinnamon stick for garnish. Serve immediately.

Notes

Chill all ingredients thoroughly before serving. For a non-alcoholic version, substitute prosecco with dry sparkling water or non-alcoholic sparkling wine. For a crowd, set up a mimosa bar with rimmed glasses and let guests assemble their own. The cinnamon sugar mixture can be stored in an airtight container for up to a month.
