This creamy, spicy buffalo chicken dip is the ultimate crowd-pleaser, perfect for game day or any gathering. Made with cream cheese, ranch, and tender chicken, it stays smooth and scoopable without separating.

  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 3 cups cooked chicken, shredded or diced
  • 3/4 cup buffalo hot sauce (such as Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 2 green onions, thinly sliced

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Soften the cream cheese properly: take it out of the fridge at least 45 minutes before starting. If in a hurry, cut into cubes and microwave in 15-second bursts until just softโ€”not melted.
  3. Mix the base: In a large mixing bowl, beat the softened cream cheese with a hand mixer until completely smooth. Add the sour cream and buttermilk, then beat again until combined. Sprinkle in the ranch seasoning and mix until uniform.
  4. Prepare the buffalo chicken: In a separate bowl, toss the shredded chicken with the buffalo hot sauce and melted butter. Let it sit for 5 minutes.
  5. Fold it together: Add the buffalo chicken mixture to the cream cheese base. Fold gently with a rubber spatula until just combined.
  6. Transfer to a 9×13-inch baking dish or 2-quart casserole dish. Spread the mixture evenly. Sprinkle the shredded cheddar cheese on top, followed by the crumbled blue cheese if using.
  7. Bake for 20-25 minutes until bubbly around the edges and lightly golden on top. For a deeper color, broil for the last 2 minutes, watching closely.
  8. Let the dip rest for 5-10 minutes after coming out of the oven.
  9. Garnish with sliced green onions and serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

Don’t rush the cream cheeseโ€”softening it properly prevents graininess. Shred chicken while warm for best texture. This dip can be assembled a day ahead and baked just before serving. For a slow cooker version, combine all ingredients and cook on low for 2-3 hours, adding cheese during the last 30 minutes.
