These Easy Buffalo Chicken Ranch Pinwheel Roll-Ups are the perfect game day appetizerโ€”flaky crescent dough wrapped around a creamy, spicy buffalo chicken filling. Quick to make with simple ingredients, they disappear faster than the commercials.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/3 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 packet (1 oz) dry ranch seasoning mix
  • 2 cups cooked chicken, shredded or finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced (optional)
  • 2 cans (8 oz each) refrigerated crescent roll dough
  • 2 tablespoons melted butter
  • 1 tablespoon buffalo wing sauce (for topping)
  • 1 teaspoon ranch seasoning (for topping)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and fluffy, about 1 minute. Add the buffalo wing sauce, ranch dressing, and dry ranch seasoning mix. Beat again until well combined.
  3. Fold in the shredded chicken, cheddar cheese, mozzarella cheese, and green onions (if using). Stir until evenly distributed.
  4. Unroll one can of crescent dough and press the perforated seams together to form a single rectangular sheet, about 9×13 inches.
  5. Spread half of the filling evenly over the dough rectangle, leaving a 1/2-inch border along the long edges.
  6. Starting from the long edge, carefully roll the dough into a tight log. Pinch the seam gently to seal.
  7. Using a sharp serrated knife, slice the log into 1-inch rounds (about 8 to 10 slices).
  8. Place the pinwheels cut-side up on the prepared baking sheet, spacing them about 1 inch apart. Repeat steps 4 through 7 with the second can of dough and remaining filling.
  9. In a small bowl, whisk together the melted butter, 1 tablespoon buffalo sauce, and 1 teaspoon ranch seasoning. Brush this mixture over the tops of the pinwheels.
  10. Bake for 12 to 15 minutes, or until the pinwheels are golden brown and the filling is bubbly.
  11. Let the pinwheels cool on the baking sheet for 5 minutes before transferring to a serving platter. Garnish with fresh parsley or chives if desired, and serve warm.

Notes

Softened cream cheese is essential for a smooth filling. Chill the rolled log for 15-20 minutes before slicing for cleaner cuts. Don’t skip the 5-minute cooling time after baking to help the pinwheels hold their shape. For make-ahead, assemble up to 24 hours in advance and refrigerate, then add 2-3 minutes to baking time.
