This easy candy corn popcorn bark comes together in about 15 minutes, turning ordinary ingredients into a sweet, salty, crunchy fall treat that even candy corn skeptics will love.

  • 1 cup pretzel twists or sticks (broken into bite-sized pieces)
  • 12 ounces white chocolate melting wafers (such as Ghirardelli or CandiQuik)
  • 1 cup candy corn (classic Brach’s works best)
  • 1/4 cup roasted salted peanuts (optional)
  • 1/4 cup dried cranberries or raisins (optional)
  • Flaky sea salt (optional, for sprinkling)
  • 1/2 teaspoon pumpkin pie spice (optional, for fall twist)

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Pop about 1/3 cup of kernels to get 8 cups of popped popcorn. Spread on a baking sheet and pick out any unpopped kernels. Let cool completely.
  3. Place pretzels in a zip-top bag and gently crush into pea-sized pieces.
  4. Place white chocolate melting wafers in a large microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted (about 2-3 minutes total).
  5. Add the popped popcorn and crushed pretzels to the melted white chocolate. Fold gently with a rubber spatula until evenly coated.
  6. Reserve 1/2 cup of candy corn for topping. Add the remaining 1/2 cup to the popcorn mixture and fold gently to distribute.
  7. Transfer the coated mixture to the prepared baking sheet. Spread into an even layer about 1/2 to 3/4 inch thick using a spatula or lightly greased hands.
  8. Sprinkle the reserved 1/2 cup of candy corn over the top, pressing gently so they stick. Add optional add-ins (peanuts, cranberries, flaky sea salt) if desired.
  9. Let the bark set at room temperature for 30-45 minutes, or until firm. For faster setting, refrigerate for 15 minutes.
  10. Once set, break into irregular pieces with your hands. Store in an airtight container at room temperature for up to a week.

Notes

Use plain or lightly salted popcorn; avoid heavily buttered varieties. For white chocolate chips, add 1 teaspoon of coconut oil to help them melt smoothly. Let the bark set completely before breaking to avoid crumbling. The flavors improve after a day or two.
