  • 2 large English cucumbers
  • 1 teaspoon kosher salt
  • 1 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon granulated sugar
  • 3 tablespoons fresh dill, chopped
  • ½ teaspoon black pepper, freshly ground
  • ½ small red onion, thinly sliced (optional)

Instructions

  1. Wash and dry the cucumbers. Trim off the ends, then slice them into thin rounds — about ⅛-inch thick.
  2. Place the sliced cucumbers in a large bowl and sprinkle with 1 teaspoon of kosher salt. Toss gently to coat. Let them sit for 15-20 minutes.
  3. After 15 minutes, transfer the cucumbers to a colander and rinse briefly with cold water to remove excess salt. Then, spread them out on a clean kitchen towel or layer of paper towels. Pat them dry gently but thoroughly.
  4. In a small bowl, whisk together 1 cup sour cream, 2 tablespoons mayonnaise, 2 tablespoons white vinegar, 1 tablespoon sugar, 3 tablespoons chopped fresh dill, and ½ teaspoon black pepper. Taste and adjust.
  5. Place the dried cucumber slices in a serving bowl. If using red onion, add the thinly sliced pieces now. Pour the dressing over the top and toss gently until every slice is coated. Cover and refrigerate for at least 30 minutes before serving.
  6. Give the salad a gentle stir before serving. Garnish with a few extra sprigs of fresh dill if desired.

Notes

Don’t skip the salting step — it draws out excess moisture so the salad stays creamy. For the crispiest texture, combine dressing and cucumbers no more than 2 hours before serving. Leftovers keep in the refrigerator for up to 2 days, but cucumbers will soften.
