  • 1 ½ cups (150 g) graham cracker crumbs
  • 6 tablespoons (85 g) unsalted butter, melted
  • 2 tablespoons (25 g) granulated sugar
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • ½ cup (120 ml) fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 ½ cups (360 ml) whipped topping
  • Optional: a few drops yellow food coloring

Instructions

  1. Make the crust: In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until crumbs are evenly coated and look like wet sand.
  2. Press the mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Use the bottom of a glass or measuring cup to pack it tight.
  3. Chill the crust in the fridge for about 10 minutes to set while preparing the filling.
  4. Prepare the filling: In a large mixing bowl, whisk together sweetened condensed milk, fresh lemon juice, and lemon zest until the mixture thickens slightly.
  5. Gently fold in the whipped topping using a spatula, being careful not to overmix to keep it light and airy.
  6. If desired, add a few drops of yellow food coloring and fold until evenly blended.
  7. Pour the filling into the prepared crust and smooth the top with a spatula.
  8. Cover the pie loosely with plastic wrap or foil to prevent freezer burn.
  9. Freeze for at least 4 hours, ideally overnight.
  10. Remove from freezer about 10 minutes before slicing for easier cutting.

Notes

Use fresh lemon juice for best flavor and texture. Fold whipped topping gently to keep filling light and airy. Press crust firmly but not too hard to avoid a rock-solid crust. Let pie sit 10 minutes before slicing for easier cuts. Can be made ahead and tastes better after overnight freezing.
