A quick and easy recipe for crispy, tangy honey mustard chicken drumsticks with a perfect balance of sweet and savory flavors. Ideal for busy weeknights or casual gatherings.

Ingredients

Scale
  • 8 chicken drumsticks (about 2 pounds / 900 grams), preferably organic or free-range
  • 1/4 cup (60 ml) honey
  • 2 tablespoons (30 ml) Dijon mustard
  • 1 tablespoon (15 ml) whole grain mustard (or double Dijon if unavailable)
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 grams) garlic powder
  • 1 teaspoon (5 grams) onion powder
  • 1 teaspoon (5 grams) paprika
  • 1 teaspoon (5 grams) salt
  • 1/2 teaspoon (2 grams) freshly ground black pepper
  • 1 tablespoon (15 ml) lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, garlic powder, onion powder, paprika, salt, black pepper, and lemon juice if using until smooth and well combined.
  3. Pat the chicken drumsticks dry with paper towels to remove moisture.
  4. Toss the drumsticks in the honey mustard glaze, ensuring each piece is evenly coated.
  5. Arrange the drumsticks on a rimmed baking sheet lined with parchment paper in a single layer, leaving space between each for air circulation.
  6. Bake uncovered for 35-40 minutes, turning the drumsticks halfway through baking to ensure even crisping. If any spots start to burn, tent loosely with foil.
  7. Check for doneness using a meat thermometer (internal temperature should reach 165°F / 74°C) or pierce the thickest part to ensure juices run clear.
  8. Let the drumsticks rest for 5 minutes before serving to allow juices to redistribute.

Notes

Pat chicken dry thoroughly before glazing to ensure crispy skin. Bake at high heat (425°F) uncovered for best crispness. Turn drumsticks halfway through baking. Tent with foil if glaze starts to burn. Let rest before serving. The glaze can be prepared a day ahead and stored in the fridge. For a spicy twist, add cayenne pepper or chili flakes. Use a wire rack over the baking sheet for extra crispness if available.
