Easy Crockpot Lasagna Soup: Kid-Approved Family Dinner

This kid-approved crockpot lasagna soup is proof that sometimes the best recipes come from the most chaotic moments. It’s warm, comforting, and forgiving—everything you need on a busy weeknight.

Ingredients

  • 1 pound lean ground beef (85/15)
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 3 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley or basil, chopped (for garnish)

Instructions

  1. Brown the beef and aromatics. Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon. Cook for 5-7 minutes, until the beef is browned and the onion is soft. Drain off any excess fat if needed. Stir in the minced garlic and cook for 30 seconds, until fragrant.
  2. Transfer to the crockpot. Scoop the beef mixture into your slow cooker. Add the crushed tomatoes, diced tomatoes (with their juices), tomato paste, chicken broth, oregano, basil, salt, pepper, and red pepper flakes if using. Stir everything together until the tomato paste is fully incorporated.
  3. Add the noodles. Break the lasagna noodles into 2-inch pieces and stir them into the soup. Make sure they’re mostly submerged in the liquid.
  4. Cook low and slow. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. Stir once halfway through if you’re around, but it’s not strictly necessary. The soup is ready when the noodles are tender and the flavors have melded together.
  5. Make the cheesy topping. About 15 minutes before serving, mix the ricotta, mozzarella, and Parmesan in a small bowl. Stir in a pinch of salt and pepper. Set aside at room temperature.
  6. Serve and finish. Ladle the soup into bowls. Drop a generous dollop of the cheese mixture into each bowl (it will start to melt into the hot soup). Garnish with fresh parsley or basil if you’re feeling fancy. Serve immediately.

Notes

Don’t overcook the noodles. Stick to the recommended cooking times. If you’re not serving right away, cook the noodles separately and add them just before serving. Taste and adjust seasoning before serving. For the best texture, use regular lasagna noodles (not no-boil).
