  • 4 large flour tortillas (burrito-sized, about 10 inches)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge about 30 minutes before starting, or microwave for 10-15 seconds until soft but not melted.
  2. Make the filling: In a medium mixing bowl, combine softened cream cheese, sour cream, and milk. Beat with a hand mixer on medium speed until smooth and fluffy, about 1-2 minutes. Scrape down sides. Add shredded cheddar, chopped green onions, and 2 tablespoons of everything bagel seasoning. Mix until well combined. Fold in red bell pepper if using.
  3. Prepare the tortillas: Lay tortillas flat on a clean work surface. If stiff, warm in microwave for about 10 seconds to make more pliable.
  4. Spread the filling: Divide cream cheese mixture evenly among tortillas (about 1/4 cup per tortilla). Spread in a thin, even layer, leaving about 1/2-inch border around edges.
  5. Roll them up: Starting at one edge, tightly roll each tortilla into a log. Roll as snugly as possible without squeezing filling out the ends.
  6. Chill the rolls: Wrap each rolled tortilla tightly in plastic wrap. Place on a baking sheet or large plate and refrigerate for at least 1 hour, or up to overnight.
