Easy Fresh Cherry Yogurt Parfait

A quick and simple breakfast parfait featuring fresh cherries, creamy Greek yogurt, crunchy granola, and a touch of honey. Perfect for busy mornings or a light snack.

  • 1 cup (150 grams) fresh cherries, pitted and halved
  • 1 cup (8 fl oz / 240 ml) plain Greek yogurt (full-fat or low-fat)
  • 1/2 cup (50 grams) granola
  • 1 to 2 tablespoons (1530 ml) honey
  • 1/2 teaspoon vanilla extract (optional)
  • 1 tablespoon chia seeds (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse 1 cup (150 grams) of fresh cherries, then pit and halve them. If you don’t have a cherry pitter, carefully slice around the pit with a small knife. This should take about 5 minutes.
  2. In a medium bowl, combine 1 cup (240 ml) of plain Greek yogurt with 1 to 2 tablespoons (15-30 ml) of honey and 1/2 teaspoon vanilla extract if using. Stir gently until smooth and creamy. Taste and adjust sweetness as desired. This takes about 2 minutes. Optionally, fold in 1/4 cup cottage cheese for extra protein.
  3. Layer the parfait by starting with a spoonful of the yogurt mixture in serving glasses or bowls, then add a layer of halved cherries followed by a sprinkle of granola (1/2 cup or 50 grams). Repeat layers until the glass is filled, finishing with granola and a few cherries on top. This takes 3-4 minutes.
  4. Sprinkle 1 tablespoon of chia seeds over the top for texture and nutrition. Garnish with fresh mint leaves for freshness.
  5. Serve immediately or chill in the fridge for 10-15 minutes before serving. Note that granola may lose crunch if chilled too long.

Notes

Use a cherry pitter if available to speed up pitting. For a dairy-free version, substitute Greek yogurt with coconut or almond yogurt and honey with maple syrup. Add granola just before serving to keep it crunchy. If yogurt is too thick, stir in a splash of milk to loosen. Assemble the night before but keep granola separate to maintain crunch.
