  • 4 large flour or whole wheat tortillas
  • 2 cups cooked chicken, shredded or chopped
  • 1 cup creamy hummus
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 medium cucumber, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • Handful of fresh spinach or baby arugula
  • Optional: fresh dill or parsley, chopped
  • Optional: smoked paprika or za’atar spice
  • Optional: crumbled feta cheese

Instructions

  1. Thinly slice the cucumber, red bell pepper, and red onion. Soak onion slices in cold water for 5 minutes if you want a milder flavor, then drain well.
  2. Optional: Heat a dry skillet over medium heat and warm each tortilla for 20-30 seconds per side until pliable. Keep warm covered with a clean towel.
  3. In a small bowl, combine hummus, lemon juice, and olive oil. Stir until smooth and slightly loosened. Add smoked paprika or za’atar if desired.
  4. If chicken is unseasoned, toss with salt, pepper, and a teaspoon of olive oil or lemon juice. Add fresh dill or parsley if using.
  5. Lay a warm tortilla flat. Spread 3-4 tablespoons of the hummus mixture evenly over the surface, leaving a small border.
  6. Layer with spinach or arugula, then add sliced veggies in a neat pile. Top with ½ cup of prepared chicken. Sprinkle crumbled feta if desired.
  7. Fold in the sides of the tortilla, then roll tightly from one end to the other. Wrap in parchment paper or foil if desired.
  8. Serve immediately with fresh fruit or a light Greek salad, or refrigerate wrapped for up to 24 hours.
