These Healthy Ground Turkey Taco Zucchini Boats are a quick and easy weeknight dinner that’s both delicious and nutritious. Tender zucchini boats are stuffed with a flavorful ground turkey taco filling, topped with melted cheese, and baked to perfection.

  • 4 medium zucchini (about 89 inches long, firm to the touch)
  • 1 tablespoon olive oil (for brushing the boats)
  • Salt and black pepper (to taste)
  • 1 pound ground turkey (93% lean works best)
  • 1 tablespoon olive oil (for cooking the turkey)
  • 1 small yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/2 cup canned diced tomatoes with green chilies (like Rotel, drained)
  • Salt and black pepper (to taste)
  • 1/4 cup chopped fresh cilantro (plus more for garnish)
  • 1 cup shredded Mexican blend cheese (or cheddar, or Monterey Jack)
  • Optional toppings: sour cream or Greek yogurt, sliced avocado, fresh salsa, hot sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper or foil for easier cleanup.
  2. Wash and dry your zucchini, then trim off the stem ends. Cut each zucchini in half lengthwise so you have two long halves. Using a melon baller or spoon, scoop out the center flesh, leaving about a 1/4-inch thick shell. Reserve the scooped-out flesh for another use.
  3. Place the zucchini halves cut-side up on your prepared baking sheet. Brush them lightly with olive oil and season with a pinch of salt and pepper. Bake for 8-10 minutes, just until they start to soften but still hold their shape.
  4. While the zucchini bakes, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until translucent and starting to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the ground turkey to the skillet, breaking it up with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until the turkey is no longer pink and has some brown bits. Drain excess liquid if necessary.
  6. Push the turkey to one side of the pan and add the tomato paste. Let it cook for about a minute, stirring, until it darkens slightly. Then stir it into the meat along with the chili powder, cumin, smoked paprika, oregano, cayenne (if using), and a good pinch of salt and pepper. Cook for another minute until fragrant.
  7. Stir in the drained diced tomatoes with green chilies. Let everything simmer together for 2-3 minutes, allowing the flavors to meld and the liquid to reduce slightly. Taste and adjust seasoning. Stir in the chopped cilantro and remove from heat.
  8. Remove the pre-baked zucchini from the oven. Spoon the turkey filling evenly into each zucchini boat, pressing gently to pack it in. Use about 1/3 cup of filling per boat.
  9. Sprinkle the shredded cheese evenly over the filled boats.
  10. Return the baking sheet to the oven and bake for 12-15 minutes, until the cheese is melted and bubbly and the zucchini is tender when pierced with a fork. If desired, switch to broil for the last 1-2 minutes for extra golden cheese.
  11. Let the zucchini boats rest on the pan for 5 minutes before serving. Garnish with fresh cilantro and any toppings you like.

Notes

Don’t skip the pre-bake step to prevent mushy zucchini. Let the filling cool slightly before stuffing. Drain the canned tomatoes to avoid soggy filling. Use a rimmed baking sheet to catch juices.
