  • 1 large flour tortilla (10-inch, burrito size)
  • 810 slices deli turkey breast (about 6 ounces)
  • 1/3 cup hummus (about 80 grams)
  • 1 cup fresh spinach leaves (packed)
  • 1/2 medium red bell pepper (thinly sliced into strips)
  • 1/4 English cucumber (thinly sliced lengthwise)
  • 1/4 cup shredded carrots
  • Salt and black pepper (to taste)
  • 2 tablespoons crumbled feta cheese (optional)
  • 2 tablespoons chopped sun-dried tomatoes (optional)
  • 1/4 cup sprouts (optional)

Instructions

  1. Prep your vegetables first: Wash and dry the spinach thoroughly. Slice the bell pepper into thin strips, about 2 inches long. Slice the cucumber lengthwise into thin strips, about 1/4 inch thick. Shred the carrots if fresh. Pat everything dry with paper towels.
  2. Warm the tortilla slightly: Place one tortilla on a microwave-safe plate and microwave for 15-20 seconds until warm and pliable. Alternatively, wrap in foil and warm in a 300°F oven for about 5 minutes.
  3. Spread the hummus evenly: Place the warm tortilla on a cutting board. Using a butter knife or offset spatula, spread the hummus in an even layer, leaving a 1-inch border around the edges.
  4. Layer the turkey: Arrange the turkey slices evenly over the hummus, overlapping them slightly. Press down gently so they stick.
  5. Add the vegetables: Layer the spinach leaves evenly over the turkey. Place the bell pepper strips in a line down the center. Add the cucumber strips and shredded carrots on top. Don’t overstuff.
  6. Season lightly: Sprinkle a tiny pinch of salt and pepper over the vegetables.
  7. Roll it up tightly: Start at the bottom edge closest to you. Fold the bottom flap over the filling, tucking it under slightly. Fold in the sides, then roll upward firmly but gently. Keep the roll tight.
  8. Slice and serve: Using a sharp serrated knife, slice the roll-up into 1-inch thick pinwheels. Cut straight down without sawing. Wipe the knife between slices for clean cuts. Serve immediately or refrigerate for later.

Notes

Warm the tortilla to prevent cracking. Pat all vegetables dry to avoid sogginess. Spread hummus to the edges of the filling area to create a moisture barrier. For meal prep, store whole roll-ups (unsliced) wrapped tightly in plastic wrap in the refrigerator for up to 3 days. Slice just before serving for best texture. Let the wrapped roll rest in the fridge for 15 minutes before slicing for cleaner cuts.
