  • Sesame seeds and sliced green onions (optional, for garnish)

Instructions

  1. In a small bowl, whisk together the honey, low-sodium soy sauce, and minced garlic until well combined.
  2. Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer.
  3. Pour the honey-garlic mixture evenly over the chicken, stirring to coat.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F.
  5. Optional: Remove the chicken from the slow cooker and set aside. Pour the liquid into a small saucepan. Whisk in the cornstarch slurry and simmer over medium heat for 2-3 minutes until thickened. Alternatively, leave the sauce in the slow cooker on HIGH, whisk in the slurry, and cook uncovered for 15-20 minutes.
  6. Return the chicken to the sauce and toss to coat. Let sit for 5 minutes.
  7. Serve hot, garnished with sesame seeds and sliced green onions if desired.
