A quick and festive dessert featuring layers of creamy instant vanilla pudding, fresh strawberries and blueberries, whipped cream, and optional crunchy granola or graham crackers. Perfect for summer parties and patriotic celebrations.

Ingredients

Scale
  • 2 packets instant vanilla pudding mix (approximately 3.4 oz or 96 g each)
  • 3 cups (720 ml) whole milk or 2% milk
  • 1 ½ cups (about 225 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries, washed and drained
  • 1 cup (240 ml) whipped cream, lightly sweetened or store-bought
  • ½ cup (50 g) granola or crushed graham crackers (optional)

Instructions

  1. In a large bowl, whisk together 2 packets of instant vanilla pudding mix with 3 cups (720 ml) of cold milk. Whisk vigorously for about 2 minutes until the mixture thickens. Alternatively, use an electric mixer on medium speed for 1-2 minutes for a fluffier texture. Let it set for 5 minutes while prepping the berries.
  2. Rinse 1 ½ cups (225 g) of strawberries and 1 cup (150 g) of blueberries under cold water. Pat dry gently with a towel. Hull and slice the strawberries into thin pieces.
  3. If using fresh heavy cream, whip 1 cup (240 ml) with a hand mixer until soft peaks form. For store-bought whipped cream, stir gently to loosen for layering.
  4. In clear glasses, start with a layer of strawberries (about 2 tablespoons), then spoon in a layer of pudding (about ¼ cup or 60 ml). Add a thin layer of whipped cream (about 2 tablespoons), followed by a layer of blueberries (2 tablespoons). Repeat pudding and whipped cream layers until glass is nearly full. End with a final layer of berries on top.
  5. Optionally, sprinkle 1-2 tablespoons of granola or crushed graham crackers between layers or on top for added texture.
  6. Chill parfaits in the refrigerator for at least 30 minutes before serving to let flavors meld. Serve chilled.

Notes

Use clear glasses to showcase the red, white, and blue layers for a festive look. Pat berries dry to avoid watery pudding layers. Assemble parfaits close to serving time to keep layers fresh. For dairy-free, use coconut milk and coconut whipped cream. Granola or graham crackers add crunch but can be omitted for gluten-free version. If pudding is too runny, let it set longer before layering.
