  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, thinly sliced
  • 1 package (16 oz) refrigerated biscuit dough (Pillsbury Grands recommended)
  • 1 tablespoon melted butter
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Make the buffalo chicken filling: In a medium mixing bowl, beat the softened cream cheese until smooth. Add the shredded chicken, buffalo sauce, ranch dressing, and half of the shredded cheddar cheese. Mix until well combined. Fold in the sliced green onions and crumbled blue cheese if using.
  3. Prepare the biscuit dough: Open the can of refrigerated biscuit dough. Separate the biscuits and place them on a lightly floured surface. Flatten each biscuit into a 3-inch circle.
  4. Assemble the football bites: Place a spoonful (about 1 to 2 tablespoons) of the buffalo chicken filling in the center of each flattened biscuit. Bring the edges of the dough up and over the filling, pinching them together to form a ball. Place each ball seam-side down on the prepared baking sheet, spacing them about 2 inches apart.
  5. Brush with butter and bake: In a small bowl, mix the melted butter with the garlic powder. Brush this mixture over the tops of each football bite. Sprinkle the remaining shredded cheddar cheese on top, followed by a pinch of dried parsley. Bake for 12 to 15 minutes, or until the biscuits are golden brown and the filling is hot and bubbly.
  6. Cool and serve: Let the football bites cool on the baking sheet for about 5 minutes before serving. Transfer to a serving platter and garnish with extra green onions if desired.

Notes

For extra crispy bottoms, bake the bites on the lower rack of the oven for the last 2 minutes. The filling tastes even better the next day, so you can prep it a day in advance. To freeze, assemble the bites up to the baking step, freeze until solid, then transfer to a freezer-safe bag. Bake from frozen, adding 3 to 5 minutes to the baking time.
