  • 1 ripe avocado (mashed smooth)
  • 2 tablespoons plain Greek yogurt (can substitute dairy-free yogurt)
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons finely chopped green onion
  • 2 tablespoons chopped fresh cilantro (optional)
  • Salt and pepper to taste
  • 1/4 cup shredded carrot
  • Baby spinach or lettuce leaves (a few per wrap)

Instructions

  1. Mash the avocado, Greek yogurt, and lime juice together in a mixing bowl until creamy with a few small chunks remaining.
  2. Stir in chopped green onion, cilantro, shredded carrot, salt, and pepper. Adjust seasoning to taste.
  3. Lay out each large flour tortilla flat on a clean surface. Warm slightly if needed to make rolling easier.
  4. Spread a thin, even layer of the avocado mixture over each tortilla, leaving about a 1/2 inch border around the edges.
  5. Layer sliced turkey breast evenly over the avocado spread.
  6. Place baby spinach or lettuce leaves over the turkey slices.
  7. Roll each tortilla tightly into a cylinder without overstuffing.
  8. Wrap each rolled tortilla tightly in plastic wrap or parchment paper.
  9. Chill the wrapped rolls in the refrigerator for at least 30 minutes to firm up.
  10. Unwrap and slice each roll into 1-inch thick pinwheel slices using a sharp serrated knife.
  11. Arrange pinwheels on a plate or pack them for lunch.

Notes

Use ripe but firm avocados to avoid soggy wraps. Warm tortillas slightly to prevent cracking. Chill wraps before slicing for clean pinwheel shapes. Store wrapped tightly in the fridge up to 2 days.
