A quick and fresh no-cook snack featuring cherry tomatoes, fresh mozzarella, and basil leaves drizzled with balsamic glaze. Ready in just 10 minutes, perfect for last-minute guests or casual get-togethers.

  • 20 cherry tomatoes, washed
  • 20 small fresh mozzarella balls (bocconcini or ciliegine), drained
  • 20 fresh basil leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • 1 to 2 tablespoons balsamic glaze
  • Pinch of flaky sea salt (like Maldon)
  • Freshly ground black pepper, to taste
  • About 20 wooden skewers or toothpicks

Instructions

  1. Wash the cherry tomatoes and basil leaves thoroughly. Drain the mozzarella balls well to avoid excess moisture. Halve tomatoes if preferred for smaller bites.
  2. Optional: In a small bowl, gently toss the tomatoes and mozzarella with 2 tablespoons of extra virgin olive oil to add richness.
  3. Assemble the skewers by threading one cherry tomato first, followed by a folded basil leaf, then a mozzarella ball. Repeat until all ingredients are used.
  4. Arrange the skewers on a serving platter. Sprinkle with flaky sea salt and freshly ground black pepper to taste.
  5. Drizzle balsamic glaze lightly over the skewers to add a sweet tang without overpowering the flavors.
  6. Let the skewers sit at room temperature for about 5 minutes before serving to allow flavors to meld.

Notes

For best results, use ripe, flavorful cherry tomatoes and drain mozzarella thoroughly to avoid sogginess. Fold basil leaves gently to keep them fresh and green. Drizzle balsamic glaze lightly to balance flavors. Skewers can be assembled ahead but add seasoning and glaze just before serving to keep fresh.
