  • 1 ยฝ cups (300g) granulated sugar
  • ยฝ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 cup (240ml) whole milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • ยฝ teaspoon salt
  • For the Sprinkle Frosting:
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 2 teaspoons vanilla extract
  • 3–4 tablespoons (45-60ml) heavy cream
  • ยฝ cup (90g) sprinkles (rainbow jimmies), plus more for topping

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease two 9-inch round cake pans with butter or nonstick spray, then line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until no lumps remain.
  3. Make a well in the center of the dry ingredients. Pour in melted butter, eggs, milk, and vanilla extract. Whisk until just combined, about 20-30 seconds. Do not overmix; a few small lumps are okay.
  4. Divide batter evenly between the prepared pans (about 450g per pan). Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean. Tops should be golden and spring back when lightly touched.
  5. Let cakes cool in pans for 10 minutes. Run a knife around edges, invert onto a cooling rack, remove parchment paper, and let cool completely.
  6. While cakes cool, make frosting: In a large bowl, beat softened butter with a hand mixer until creamy, about 2 minutes. Gradually add powdered sugar, one cup at a time, beating on low speed. Add vanilla and 3 tablespoons heavy cream, then beat on medium-high for 3 minutes until light and fluffy. If too thick, add remaining tablespoon of cream. Fold in sprinkles with a spatula.
  7. Place one cake layer on a serving plate. Spread about ยพ cup frosting evenly on top. Place second layer on top, then frost entire cake with remaining frosting. Top with extra sprinkles.

Notes

For best results, use room-temperature eggs and milk. Do not overmix the batter. Let cakes cool completely before frosting. If frosting is too runny, refrigerate for 10-15 minutes. Cake tastes even better the next day.
