Easy Oven-Baked Bratwurst with Apples & Sauerkraut

Juicy bratwurst roasted with caramelized apples and tangy sauerkraut on a single sheet pan. This easy one-pan meal is perfect for fall and ready in under 45 minutes.

  • 46 fresh bratwurst sausages (about 1.5 lbs or 680g)
  • 2 medium apples (about 300g total), such as Honeycrisp, Fuji, or Gala
  • 1 large yellow onion (about 200g), sliced into ½-inch rings or half-moons
  • 1 ½ cups sauerkraut (about 350g), drained
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon brown sugar (12g)
  • 1 teaspoon caraway seeds (optional)
  • ½ teaspoon kosher salt (3g)
  • ¼ teaspoon black pepper (1g), freshly ground
  • For serving (optional): whole-grain mustard, fresh parsley (chopped), bratwurst buns

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil for easy cleanup.
  2. Core the apples and cut them into ½-inch (1.3cm) thick wedges. Slice the onion into ½-inch (1.3cm) thick rings or half-moons.
  3. Drain the sauerkraut in a fine-mesh strainer, pressing gently with a spoon to remove excess liquid.
  4. In a large bowl, toss the apple wedges, onion slices, and drained sauerkraut with olive oil, brown sugar, caraway seeds, salt, and pepper. Spread in an even layer on the prepared pan.
  5. Nestle the bratwurst sausages on top of the apple-sauerkraut mixture, spacing them evenly. Prick each brat once or twice with a fork.
  6. Roast for 20 minutes. Remove the pan, flip the bratwurst using tongs, and stir the apples and sauerkraut.
  7. Roast for another 15-20 minutes, until the bratwurst reaches an internal temperature of 160°F (71°C) and the apples are tender and caramelized.
  8. Let the pan rest for 5 minutes before serving. Garnish with fresh parsley and serve with whole-grain mustard on the side.

Notes

For extra caramelization, switch the oven to broil for the last 5 minutes, watching closely. Use room-temperature brats for even cooking. Save pan juices to spoon over the brats when serving. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
