  • 2 large eggs, room temperature
  • 1 ½ teaspoons pure vanilla extract
  • ¾ cup (120g) rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13-inch pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together 2 ½ cups (315g) all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup (226g) softened unsalted butter with 1 cup (200g) granulated sugar and ½ cup (100g) packed brown sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  4. Beat in 2 room temperature eggs, one at a time, followed by 1 ½ teaspoons pure vanilla extract. Mix until combined but do not overmix.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed or folding gently with a spatula until just combined.
  6. Gently fold ¾ cup (120g) rainbow sprinkles into the batter, being careful not to crush them.
  7. Spread the batter evenly in the prepared baking pan and smooth the surface with a spatula.
  8. Bake for 25-30 minutes until edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
  9. Let the cookie bars cool completely on a wire rack before slicing into squares.
