  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 cup cold heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Fit the pre-made crust into a 9-inch pie dish. Press gently to smooth edges and prick the bottom a few times with a fork. Bake the crust blind for 10 minutes using pie weights or dried beans. Remove and let cool slightly.
  3. In a large mixing bowl, combine strawberries, blueberries, raspberries, sugar, cornstarch, and lemon juice. Toss gently and let sit for about 5 minutes.
  4. Transfer the berry mixture to a medium saucepan over medium heat. Add butter pieces and cook, stirring frequently, until thickened and bubbling, about 5 to 7 minutes. Remove from heat and let cool slightly.
  5. Pour the warm berry filling into the pre-baked pie crust, spreading evenly. Place the pie on a baking sheet and bake for another 15 minutes.
  6. Remove the pie from the oven and let cool to room temperature, then chill in the refrigerator for at least 2 hours.
  7. In a medium chilled bowl, beat the cold heavy cream with an electric mixer on medium speed until it starts to thicken (about 1 minute). Add powdered sugar and vanilla extract, then beat on high speed until soft peaks form (2-3 minutes).
  8. Spread or pipe the whipped cream generously over the chilled pie. Garnish with fresh berries if desired. Serve immediately or keep refrigerated until ready to enjoy.

Use frozen berries thawed and drained if fresh are unavailable. For gluten-free, use a gluten-free pie crust. For dairy-free, substitute heavy cream with chilled coconut cream.
