  • 6 tablespoons unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice about 6 cups of peaches. Toss them gently in a large bowl with ⅓ cup granulated sugar, 1 tablespoon fresh lemon juice, and a pinch of salt. Set aside for 10 minutes to macerate.
  3. In a medium bowl, combine ½ cup packed brown sugar, ¾ cup all-purpose flour, 1 cup rolled oats, 1 teaspoon ground cinnamon, and ¼ teaspoon salt. Add 6 tablespoons cold unsalted butter, cut into small pieces. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits.
  4. Sprinkle 2 tablespoons of flour over the macerated peaches and stir gently to thicken the filling.
  5. Transfer the peach mixture to a 9×9-inch baking dish, spreading it evenly. Sprinkle the crumble topping over the peaches, distributing it uniformly.
  6. Bake for 40–45 minutes until the topping is golden brown and crispy and the peach filling bubbles around the edges. If the topping browns too quickly, loosely cover with foil for the last 10 minutes.
  7. Let the peach crisp cool for at least 15 minutes before serving to allow the juices to thicken.

Notes

Use ripe but firm peaches to avoid mushy texture. Cold butter is key for a crumbly topping. Toast oats lightly for extra crunch and nutty aroma. If topping browns too fast, cover with foil.
