  • 1 tablespoon chia seeds or flaxseed (optional)

Instructions

  1. Warm the tortillas: Place each 6-inch tortilla in the microwave for about 10 seconds or warm briefly in a dry skillet over medium heat for 20 seconds to make them pliable.
  2. Spread peanut butter: Use a butter knife or small spatula to spread roughly 1 tablespoon of peanut butter evenly over each tortilla, leaving about a 1/2-inch border at the edges.
  3. Slice bananas: On a cutting board, slice the bananas lengthwise into thin strips, about 1/4 inch thick.
  4. Arrange banana slices: Lay 3-4 banana slices on top of the peanut butter on each tortilla, placing them end to end without overlapping too thickly.
  5. Add optional toppings: Drizzle honey or maple syrup over the bananas, sprinkle cinnamon and chia seeds if using.
  6. Roll up: Starting at one edge, gently but firmly roll the tortilla over the banana slices until fully wrapped. Warm more if tortilla feels stiff.
  7. Slice and serve: Cut each roll-up into 2-3 bite-sized pieces with a sharp knife. Serve immediately or pack for later.

Notes

Warm tortillas slightly to make rolling easier and prevent cracking. Use ripe but firm bananas to avoid mushiness. If peanut butter is too thick, warm it briefly before spreading. Store roll-ups wrapped tightly in the fridge for up to 24 hours. Variations include using almond or sunflower seed butter, swapping bananas for thin apple slices, and adding protein powder to peanut butter.
