  • 1 tablespoon olive oil (optional)
  • A pinch of paprika or za’atar (optional)
  • 1/2 cup cherry tomatoes, halved, or red bell pepper, sliced into thin strips
  • 1/2 cup carrot sticks or orange bell pepper strips
  • 1/2 cup yellow bell pepper, sliced, or yellow squash, cut into matchsticks
  • 1/2 cup cucumber spears, sugar snap peas, or broccoli florets
  • 1/4 cup purple cabbage, thinly sliced, or purple carrots
  • 1/4 cup whole-grain crackers or pita chips (optional)
  • A small handful of berries or grapes (optional)

Instructions

  1. Prep the Hummus: Spoon 1 cup of hummus into a small bowl or the main compartment of your snack box. Optionally, create a swirl on top, drizzle with olive oil, and sprinkle with paprika or za’atar. Set aside.
  2. Wash and Dry Your Veggies: Rinse all vegetables under cold water and pat them completely dry with a clean towel or paper towels to prevent sogginess.
  3. Slice and Dice: Cut vegetables into easy-to-grab shapes. Slice bell peppers into thin 2-inch strips, carrots into pinky-finger-thick sticks, cucumbers into half-moons or thick spears, and halve cherry tomatoes. Keep sizes uniform for balance.
  4. Assemble the Rainbow: Arrange sliced veggies by color around the hummus. Group colors in separate compartments or create a rainbow arc. If using a single container, place the hummus bowl in the center and arrange veggies in a circle.
  5. Add the Fun Extras: Fill remaining gaps with crackers, pita chips, or a small handful of berries or grapes.
  6. Serve Immediately or Refrigerate: Best enjoyed fresh for maximum crunch. For prep ahead, store hummus and veggies separately and assemble before serving. Keep in an airtight container in the fridge for up to 24 hours.

Notes

For best crunch, dry vegetables thoroughly after washing. For toddlers, cut cherry tomatoes into quarters and carrots into thin, soft matchsticks.
