Easy Red White & Blueberry Icebox Cake: 4-Ingredient Summer Dessert

A no-bake, layered dessert with graham crackers, Cool Whip, fresh strawberries, and blueberries that looks like a fireworks display and tastes like pure nostalgia. Perfect for summer celebrations, it comes together in under 15 minutes of active prep time.

Ingredients

  • Graham crackers (about 1 full box, 14-16 ounces)
  • Cool Whip (16 ounces, thawed)
  • Fresh strawberries (1 pound, hulled and sliced)
  • Fresh blueberries (1 pint, about 2 cups)
  • Powdered sugar (2 tablespoons, optional)

Instructions

  1. Prepare your berries: Wash and dry the strawberries thoroughly, then hull and slice them into 1/4-inch thick pieces. Rinse the blueberries and pat them dry.
  2. Make the cream layer: In a medium bowl, gently fold the powdered sugar into the thawed Cool Whip if using. Don’t overmix.
  3. Create the first layer: Spread a thin layer (about 2 tablespoons) of the cream mixture on the bottom of your 9×13 dish. Arrange a single layer of graham crackers on top, breaking them as needed to fit.
  4. Add the cream and berries: Spread one-third of the remaining cream mixture evenly over the graham crackers. Top with one-third of the sliced strawberries and one-third of the blueberries. Press the berries gently into the cream.
  5. Repeat the layers: Add another layer of graham crackers, followed by another third of the cream and berries. Repeat one more time, ending with a final layer of graham crackers on top. Spread the remaining cream over the top layer of graham crackers, covering the edges completely.
  6. Decorate the top: Arrange the remaining berries on top in a patriotic pattern. Press them gently into the cream.
  7. Chill, chill, chill: Cover the dish tightly with plastic wrap, pressing it directly onto the surface of the cream. Refrigerate for at least 6 hours, but overnight is best.
  8. Serve cold: Slice and serve straight from the refrigerator. Use a sharp knife and wipe it clean between cuts for neat slices.

Notes

Don’t rush the chilling time. 6 hours is the minimum; overnight (12-24 hours) gives the best cake-like texture. Pat berries dry to prevent watery cake. Use room temperature Cool Whip thawed in the refrigerator. Cover edges completely with cream to prevent dry graham crackers. The cake can be stored in the refrigerator for up to 3 days and freezes for up to 1 month.
