Ingredients

  • Pork shoulder (3-4 pounds), cut into 2-inch chunks
  • Fresh Hatch green chiles (8-10 medium), roasted, peeled, and chopped
  • Yellow onion (1 large), diced
  • Garlic cloves (4-5), minced
  • Chicken broth (2 cups), low-sodium
  • Canned diced tomatoes (14.5 ounces), fire-roasted
  • Ground cumin (2 teaspoons)
  • Dried oregano (1 teaspoon)
  • Smoked paprika (1 teaspoon)
  • Salt and black pepper to taste
  • All-purpose flour or cornstarch (2 tablespoons)
  • Cold water (3 tablespoons)
  • Fresh lime juice (2 tablespoons)
  • Fresh cilantro (¼ cup), chopped

Instructions

  1. Roast and prep the Hatch chiles: Place fresh chiles on a baking sheet under the broiler for 5-7 minutes per side until skin is blackened. Transfer to a bowl, cover with plastic wrap, and steam for 10 minutes. Peel, remove stems and seeds, and chop. (If using frozen or canned, thaw/drain and chop.)
  2. Cut the pork into 2-inch chunks, trimming large fat pieces but leaving some. Season generously with salt and pepper.
  3. Layer ingredients in the slow cooker: Add diced onion and minced garlic to the bottom. Place seasoned pork on top. Add chopped Hatch chiles, fire-roasted tomatoes, cumin, oregano, and smoked paprika. Pour chicken broth around the edges.
  4. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. About 30 minutes before serving, shred the pork with two forks.
  5. Thicken the stew: In a small bowl, whisk together flour or cornstarch with cold water until smooth. Stir slurry into the stew. Cook uncovered on HIGH for 15-20 minutes, stirring occasionally.
  6. Finish with lime and cilantro: Stir in fresh lime juice. Taste and adjust salt and pepper. Ladle into bowls and top with fresh cilantro.

Notes

Don’t lift the lid during the first 6 hours of cooking. For extra depth, sear the pork in batches before adding to the slow cooker. Add lime juice at the end, not the beginning. Let the stew rest 10-15 minutes before serving for best flavor.
