  • 1/4 cup (85 grams) honey
  • 2 teaspoons chipotle powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Prepare the marinade: In a large mixing bowl, whisk together honey, chipotle powder, smoked paprika, garlic powder, ground cumin, fresh lime juice, olive oil, salt, and black pepper until smooth and aromatic.
  2. Marinate the drumsticks: Add chicken drumsticks to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes, up to 4 hours.
  3. Preheat the grill: Heat grill to medium heat (about 350°F / 175°C). For charcoal grills, wait until coals have a light ash coating. Lightly oil the grates to prevent sticking.
  4. Grill the drumsticks: Place drumsticks skin side down on the grill. Grill for 12-15 minutes per side, turning every 5 minutes. Brush with leftover marinade occasionally to build a sticky glaze.
  5. Check for doneness: Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). The skin should be caramelized and slightly charred but not burnt.
  6. Rest before serving: Remove drumsticks from grill and let rest covered loosely with foil for 5 minutes to redistribute juices.

Notes

If flare-ups occur due to honey, move drumsticks to a cooler part of the grill temporarily. Leftover marinade should be boiled before using as a sauce. For no grill, use oven broiler or grill pan, turning often to avoid burning glaze.
