  • 1/4 cup packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vegetable oil or melted butter
  • Optional: pinch of cayenne pepper or chili powder

Instructions

  1. Peel the pineapple and slice it into 1/2-inch thick rings or wedges. Removing the core is optional but recommended for easier eating.
  2. In a mixing bowl, combine 1/4 cup dark brown sugar with 1 teaspoon ground cinnamon. Add a pinch of cayenne if desired.
  3. Lightly brush the pineapple slices with oil or melted butter on both sides. Then toss or sprinkle the cinnamon brown sugar mixture evenly over the slices, pressing gently to help it stick.
  4. Preheat your grill to medium-high heat (about 375°F/190°C). Clean and lightly oil the grates to prevent sticking.
  5. Place the pineapple slices directly on the grill. Cook for 3-4 minutes per side, or until grill marks appear and the sugar caramelizes, turning golden and bubbly. Watch carefully to avoid burning.
  6. Remove from the grill and serve immediately while warm.

Notes

To prevent sticking, oil both the grill grates and pineapple slices. Use medium-high heat to get grill marks without burning the sugar. Turn pineapple slices only once for a nice crust. If sugar burns before pineapple softens, lower the heat. Leftovers can be refrigerated for up to 2 days and reheated gently.
