  • ½ cup (120 ml) honey, mild wildflower preferred
  • ¼ cup (60 ml) Dijon mustard (or spicy brown mustard)
  • 1 can pineapple rings (about 8 rings, 20 oz / 567 g), juice reserved
  • ½ cup (100 g) brown sugar (light or dark)
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 teaspoon ground cloves
  • ½ teaspoon ground black pepper, freshly ground
  • 1215 whole cloves for studding
  • Optional: 1 tablespoon soy sauce (for umami depth)
  • Optional: 1 teaspoon smoked paprika (for smoky twist)

Instructions

  1. Preheat oven to 325°F (163°C) and position rack in the center.
  2. Remove ham from packaging and pat dry. Score surface in a diamond pattern about ½ inch deep.
  3. Insert whole cloves into intersections of the scored diamonds.
  4. In a medium bowl, whisk together honey, Dijon mustard, brown sugar, apple cider vinegar, ground cloves, black pepper, and ¼ cup reserved pineapple juice. Stir in smoked paprika if using.
  5. Place ham on a rack inside a roasting pan. Brush glaze generously over the ham.
  6. Arrange pineapple rings on top of the ham, securing with toothpicks if needed.
  7. Cover loosely with aluminum foil.
  8. Roast ham for about 1 hour 30 minutes (10-12 minutes per pound), basting with glaze every 15-20 minutes. Remove foil briefly to baste, then recover.
  9. Use a meat thermometer to ensure internal temperature reaches 140°F (60°C).
  10. For the last 10 minutes, remove foil completely to allow glaze to caramelize and form a golden crust.
  11. Remove ham from oven and let rest for 10-15 minutes before slicing.

Score the ham to help glaze penetrate and create a crust. Baste every 15-20 minutes for best flavor and moisture. Use reserved pineapple juice in glaze for acidity and brightness. Remove foil for last 10 minutes to caramelize glaze but watch closely to prevent burning. Let ham rest before slicing to keep it juicy. Glaze can be made up to 2 days ahead and refrigerated.
