A quick and easy summer salad featuring sweet cherry tomatoes marinated in balsamic vinegar and olive oil, served over a luscious avocado crema. Perfect as a side dish or light meal, this recipe comes together in 10 minutes with simple, fresh ingredients.

  • 2 pints cherry tomatoes (or grape tomatoes)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil leaves, torn
  • 1 small shallot, thinly sliced (or 1/4 red onion)
  • Salt and black pepper to taste
  • 1 large ripe avocado
  • 2 tablespoons fresh lime juice
  • 2 tablespoons plain Greek yogurt (full-fat or 2%)
  • 1 small clove garlic, minced
  • 2 tablespoons water (to thin crema)
  • Salt to taste

Instructions

  1. Wash and dry cherry tomatoes. Cut each in half (or quarters if large) and place in a medium mixing bowl.
  2. Drizzle halved tomatoes with 3 tablespoons olive oil and 2 tablespoons balsamic vinegar. Add a generous pinch of salt and black pepper. Toss gently and let sit while making the crema.
  3. Make the avocado crema: Cut avocado in half, remove pit, and scoop flesh into a small bowl. Add 2 tablespoons lime juice, 2 tablespoons Greek yogurt, minced garlic, and a pinch of salt. Mash with a fork until smooth. Add water one tablespoon at a time until drizzling consistency. Taste and adjust salt.
  4. Add chopped parsley, torn basil, and sliced shallot to the tomatoes. Toss gently to combine.
  5. Spread avocado crema onto a serving platter or shallow bowl, creating swoops with the back of a spoon. Pile marinated tomatoes on top, leaving some crema visible around the edges.
  6. Drizzle any remaining balsamic dressing from the bowl over the top. Finish with flaky sea salt and black pepper. Serve immediately or let sit at room temperature for up to 30 minutes.

Notes

For best flavor, let tomatoes come to room temperature before making the salad. If making avocado crema ahead, press plastic wrap directly onto the surface to prevent browning. Toast pine nuts or sunflower seeds for added crunch. This salad is best served fresh but leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
