  • 23 fresh peaches, ripe but firm
  • 1 cup Greek yogurt (full-fat preferred, low-fat or dairy-free coconut yogurt optional)
  • 12 tablespoons honey (optional)
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons chopped nuts (toasted almonds, pecans, or walnuts, optional)
  • A few fresh mint leaves (optional)

Instructions

  1. Wash and dry 2-3 ripe but firm peaches. Slice each peach in half, removing the pit. Quarter halves if smaller pieces are desired.
  2. In a bowl, gently toss peach halves with 1 tablespoon olive oil to prevent sticking and encourage caramelization.
  3. Preheat your grill or grill pan over medium-high heat (about 5 minutes).
  4. Place peaches cut side down on the grill. Cook for about 3-4 minutes until grill marks appear and peaches start softening.
  5. Flip carefully and grill for another 2-3 minutes on the skin side. Watch carefully to avoid overcooking or falling apart.
  6. While peaches grill, scoop 1 cup Greek yogurt into a serving bowl. Drizzle 1-2 tablespoons honey and sprinkle with 1/4 teaspoon cinnamon if using. Stir gently to combine.
  7. Transfer grilled peaches to plates or bowls. Spoon the creamy yogurt alongside or on top.
  8. Sprinkle with toasted chopped nuts and fresh mint if desired.
  9. Serve immediately while peaches are warm and yogurt is cool.

Notes

Use peaches that are ripe but firm to avoid mushiness. Oil the grill grates or pan before heating to prevent sticking. Flip peaches gently to keep them intact. For vegan option, substitute Greek yogurt with plant-based yogurt and honey with maple syrup.
