A refreshing, no sugar added frozen strawberry lemonade that combines the tartness of fresh lemons with the natural sweetness of ripe strawberries for a healthy summer drink.

Ingredients

  • 2 cups (300g) fresh strawberries, hulled and halved
  • ½ cup (120ml) freshly squeezed lemon juice
  • 1 ½ cups (350g) ice cubes
  • 1 cup (240ml) cold water
  • Optional: a few sprigs fresh mint leaves
  • Optional: stevia or monk fruit sweetener to taste

Instructions

  1. Wash, hull, and halve about 2 cups (300g) of fresh strawberries. If using frozen, measure and thaw slightly for easier blending.
  2. Squeeze enough lemons to get ½ cup (120ml) of fresh lemon juice. Strain to remove seeds and pulp.
  3. Add strawberries, lemon juice, ice cubes, and cold water to the blender pitcher. Add sweetener if using.
  4. Blend on high for 30 seconds to 1 minute until the mixture is slushy but smooth. Scrape down sides if needed.
  5. Taste and adjust sweetness or thickness by adding more sweetener or water if desired. Blend briefly again if needed.
  6. Serve immediately, garnished with fresh mint leaves if desired.

Notes

Use ripe strawberries for natural sweetness. If using frozen strawberries, skip or reduce ice cubes. Crush ice beforehand if blender struggles. Blend long enough to break down ice but not so long that mixture warms. Store leftovers in airtight container in freezer up to 24 hours and re-blend after thawing.
