A quick and easy refreshing summer drink combining fresh lemon juice, muddled blueberries, and sparkling water for a bubbly, tangy punch perfect for gatherings.

  • 45 large fresh lemons (for about 1 cup lemon juice)
  • 1 cup fresh or frozen blueberries
  • 1/3 cup granulated sugar or honey (adjust to taste)
  • 3 cups cold water
  • 2 cups club soda or sparkling water
  • Ice cubes (plenty)
  • Fresh mint leaves (optional, a handful)

Instructions

  1. Juice the lemons using a juicer or hand-press to extract about 1 cup (240 ml) of fresh lemon juice. Strain to remove seeds and pulp.
  2. Place 1 cup of fresh or thawed frozen blueberries in a large pitcher. Gently muddle with a muddler or wooden spoon to release juices but keep some berries whole.
  3. Make a simple syrup by combining 1/3 cup granulated sugar or honey with 1/2 cup warm water. Stir until sugar dissolves completely.
  4. Pour the lemon juice and simple syrup into the pitcher with muddled blueberries. Add 3 cups cold water and stir gently to mix. Taste and adjust sweetness or tartness if needed.
  5. Just before serving, slowly add 2 cups club soda or sparkling water and plenty of ice cubes. Stir gently to combine. Garnish with fresh mint leaves if desired.

Notes

Add sparkling water last to keep bubbles lively and avoid stirring vigorously after adding soda to preserve fizz. Use fresh lemons for best flavor. Adjust sweetness to taste. Store punch without soda and ice in fridge up to 24 hours; add soda and ice before serving.
