A simple, fresh, and flavorful bruschetta recipe featuring ripe tomatoes, fragrant basil, and toasted baguette slices. Perfect for summer parties and casual gatherings.

Ingredients

Scale
  • 4 cups diced ripe Roma or vine-ripened tomatoes
  • 1 cup fresh basil leaves, thinly sliced
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 large French baguette, sliced into ½-inch pieces
  • Optional garnishes: small mozzarella balls, blueberries, or red peppers

Instructions

  1. Rinse and pat dry 4 cups of ripe tomatoes. Remove seeds if desired and dice into ½-inch pieces.
  2. Thinly slice 1 cup of fresh basil leaves and mince 3 cloves of garlic.
  3. In a medium bowl, combine diced tomatoes, basil, and garlic. Add 3 tablespoons extra virgin olive oil and 1 tablespoon balsamic vinegar if using. Season with 1 teaspoon kosher salt and ½ teaspoon freshly ground black pepper.
  4. Let the mixture sit at room temperature for 15-20 minutes to marinate and meld flavors.
  5. Slice a large French baguette into ½-inch slices. Toast bread slices in a skillet or grill pan over medium-high heat for 2-3 minutes per side until golden and crispy.
  6. Arrange toasted bread slices on a serving platter alongside bowls of the tomato basil mixture and optional garnishes. Encourage guests to build their own bruschetta.

Notes

Marinate the tomato basil mixture for 15-20 minutes to enhance flavor. Toast bread until golden and crispy to avoid sogginess. Optionally rub toasted bread with garlic for extra aroma. Prepare topping ahead and refrigerate, then bring to room temperature before serving.
