A quick and easy 20-minute summer side dish combining sweet watermelon, salty feta, fresh mint, and a zesty lime dressing for a refreshing and vibrant salad.

Ingredients

  • 4 cups watermelon, cubed into bite-sized pieces
  • 1 cup feta cheese, crumbled
  • A handful of fresh mint leaves, roughly chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt
  • Freshly ground black pepper, a light sprinkle

Instructions

  1. Prepare the watermelon by slicing it into 1-inch cubes, about 4 cups total.
  2. Crumble 1 cup of feta cheese into small, irregular pieces using a fork.
  3. Roughly chop a handful of fresh mint leaves.
  4. In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and black pepper. Adjust seasoning to taste.
  5. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and chopped mint.
  6. Pour the dressing over the salad and toss gently but thoroughly to coat all pieces without breaking the watermelon cubes.
  7. Taste and adjust seasoning with more salt or pepper if needed.
  8. Optionally, sprinkle with toasted pine nuts or sliced almonds for extra crunch.
  9. Serve immediately or chill for up to 10 minutes before serving.

Notes

Use ripe but firm watermelon to avoid mushy salad. Crumble feta by hand or fork for best texture. Toss gently to keep watermelon cubes intact. Serve immediately or chill briefly to keep salad fresh. Dressing can be adjusted to taste. For dairy-free, substitute feta with vegan cheese or marinated tofu.
