A quick and refreshing summer snack combining juicy watermelon cubes with salty feta cheese, perfect for gatherings or a light treat.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Crumbled feta cheese (preferably block feta crumbled fresh)
  • Optional: Fresh mint leaves
  • Optional: Freshly ground black pepper

Instructions

  1. Chill the whole watermelon in the fridge for 2-3 hours or overnight for best taste.
  2. Remove watermelon from fridge, rinse rind, and place on cutting board.
  3. Slice off both ends so watermelon sits flat, then cut in half and quarters.
  4. Carefully slice off the rind from each quarter, removing all white parts.
  5. Cut watermelon flesh into 1-inch cubes (about 10 minutes).
  6. Crumble feta cheese into a bowl using fingers or fork into small bite-sized pieces.
  7. Transfer watermelon cubes into a serving bowl or platter.
  8. Sprinkle crumbled feta evenly over the watermelon cubes.
  9. Add optional mint leaves and black pepper if desired.
  10. Serve immediately or cover and refrigerate up to 1 hour before serving.

Notes

Use a sharp knife for clean, even cubes. Assemble just before serving to avoid sogginess. Optionally add fresh mint or black pepper for extra flavor. Keep feta cold until assembly. For dairy-free, use vegan feta alternative or seasoned tofu.
