  • A few fresh mint leaves, chopped or whole (optional)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon fresh lime juice

Instructions

  1. Using a sharp serrated knife, cut a thick, round slice of watermelon about 1 inch thick. Remove any seeds and pat dry gently with a paper towel to avoid sogginess.
  2. In a small bowl, combine 1/2 cup plain Greek yogurt with 1 tablespoon honey or maple syrup and 1 teaspoon fresh lime juice. Stir until smooth and slightly runny but thick enough to dollop.
  3. Toast 1/4 cup chopped almonds or pecans in a dry skillet over medium heat for 3–5 minutes, stirring frequently until golden brown and fragrant. Remove from heat and let cool.
  4. Place the watermelon slice on a large plate. Spoon or drizzle the yogurt mixture evenly over the top, covering about 3 tablespoons but leaving some watermelon visible.
  5. Sprinkle the fresh berries evenly over the yogurt layer, then scatter the toasted nuts on top. Add fresh mint leaves if using.
  6. Optionally, squeeze a little extra fresh lime juice over the assembled pizza for brightness. Serve immediately or chill in the refrigerator for 10 minutes before serving.

Notes

Pat watermelon dry to prevent sogginess. Adjust yogurt drizzle consistency with a teaspoon of milk or water if too thick. Toast nuts carefully to avoid burning. Assemble just before serving for best texture. Substitute coconut yogurt and maple syrup for a vegan version. Use pumpkin seeds or sunflower seeds if allergic to nuts.
