  • 1 cup whole milk ricotta cheese
  • 1 teaspoon honey
  • Fresh mint leaves, roughly chopped or whole
  • 1/4 cup toasted almonds, sliced or slivered
  • 1/4 cup feta cheese crumbles (optional)
  • 1/2 cup fresh berries (blueberries or pomegranate seeds)
  • Fresh lime juice, for squeezing over slices
  • Extra virgin olive oil, light drizzle (optional)

Instructions

  1. Wash the watermelon thoroughly and cut into thick triangular slices about 1 inch thick. Arrange on a large serving platter.
  2. In a mixing bowl, whip 1 cup of whole milk ricotta cheese with 1 teaspoon honey until smooth and fluffy.
  3. If using raw almonds, toast 1/4 cup sliced almonds in a dry skillet over medium heat for 3-4 minutes until golden and fragrant. Let cool.
  4. Spread a generous layer of whipped ricotta on each watermelon slice, covering the red flesh but leaving the rind as a handle.
  5. Sprinkle crumbled feta cheese (if using), toasted almonds, fresh mint leaves, and fresh berries evenly over each slice.
  6. Just before serving, squeeze fresh lime juice over the slices and drizzle lightly with extra virgin olive oil.
  7. Serve immediately for best texture and flavor.

Notes

Use firm, ripe watermelon to avoid soggy slices. Whip ricotta well for easy spreading. Toast nuts carefully to avoid burning. Assemble toppings just before serving to keep watermelon crisp.
